Hello! Happy June 21st :)
Today marks the "official" first day of summer. Yay!
It is also my parents 41st wedding anniverary. So
so hot, and sunny, so I set out to make this pie instead.
Perfectly cold, on a hot day. Ok.. perfect on any day.
1/4 cup melted butter.Reserve about 1/4 cup,
and press the rest into the bottom of a 9x13 pan.
1 block softened cream cheese, 4 eggs,
& 2 tsp vanilla. Whip until smooth.
No chopping, or stirring, only folding, until you have
nicely combined all the peanut buttery
goodness with the whip cream.
drizzle with chocolate sauce, and top with chopped nuts.
Any type will do. I used pecans.
Then, cover with saran wrap, and pop it in the freezer.
Freeze it at least an hour, but I think it's best overnight.
Take out about 1o minutes before ready to serve.
Be sure and taste test all the way through.
And..if at all possible, eat desert first :)

I did on the 18th June I thought send you a Flickr mail, but on checking for some reason it didn't get sent. Now I am extremely upset it didn't go, because you probably dont know that I received your Squares okay.

Anyway, the squares have arrived, they are beautiful absolutely beautiful! You made a cracking job of them. I am most grateful. I would love you to pop over and I apologise for whatever went wrong.
