More Mocha Cupcakes!

I made a couple batches of these for a Valentines treat, using my fave, previously blogged Mocha recipe. So, you need, Betty Crocker Cake Mix :
To this, I added 1 cup of Buttermilk, 4 Eggs, and 1/2 Cup Vegetable Oil
 
I think the trickiest part is evenly distributing the mix among 24 tins! Bake according to directions on the box, 20 minutes at 350 in my case.

Now, the icing I whipped up in my Mix Master (you can use a bowl and electric mixer as well), and it was a little messy, so there are no pics. THIS post shows you how messy. THIS RECIPES ROCKS :

MOCHA ICING :
Dissolve 1 tsp of Instant Coffee in 1/4 Cup Warm Water
In your Mix Master Bowl ...
1/2 Cup Butter, Softened (a little), Whip a Little
To that, Add, 1/4 Cup Cocoa, Mix
Then 2 Cups Icing Sugar, 1 Cup at a time
Add Your Coffee Mix in Between Icing Sugar. 

I let this whip up for a minute or so, scraping the side, until it's light a fluffly!

Normally I double this for 24 Cupcakes. One batch isn't quite enough, 2 has enough for some serious taste testing :) 
Bake, Cool, Decorate however you would like! I bought these little toppers and liners at Superstore. Seriously Cute!
