Rhubarb Muffins

These are so good! I adapt this recipe depending on what ingredients I have on hand, and they ALWAYS turn out tasty! I've included the "original" though, if you want to try it. 
Ingredients :
1 1/4 Cups Brown Sugar
1 Cup Vegetable Oil ( I used 1/4 cup Oil / 3/4 cup Unsweetened Applesauce )
1 Egg 
2 tsp. Vanilla
1 Cup Buttermilk (Substitute by mixing : 1 tbsp Lemon in 1 Cup Milk, Let sit 10 min)
1 1/2 Cups Chopped Rhubarb
2 1/2 Cups Flour
1 tsp Baking Soda 
1/2 tsp Salt
1 tbsp Baking Powder

Mix dry ingredients in one bowl, and wet in another. Add dry to wet, do not over mix. Fill greased muffin tins and bake for 20 - 25 minutes. They usually take the full 25 if you are using the applesauce.  Let cool.

The Topping = The Best Part
Mix 1/2 cup Sugar, 1/2 tsp Cinnamon, and 2 tbsp Butter.
 Spread a little (or a lot) on each muffin. 

Devour! Or... At least that's what my family does :) xx
